I'm not a huge quiche fan but always willing to give a recipe a shot. This week's French Friday with Dorie recipe was a spinach and bacon quiche. I knew that I was going to be the only real eater in the family. The quiche was delicious, not too eggy, just the right ratio of spinach, bacon and egg. The kids were not a fan of the filling but they sure do love the crust. My little guy was wondering why I couldn't just cut off the crust around the edge and give it to him.
The quiche was easy to make. It uses the same crust as the tourteau de chevre from last week. So I knew what to expect there. I had picked up some bloomsdale spinach at the Farmers Market and Niman Ranch bacon. Those items combined with sauteed onions and garlic, eggs, cream and a sprinkling of grated parmesan made up the filling. This dish is perfect for a brunch or light lunch.

And I am not usually a fan of the crusts on things - but I agree with your little guy that this one could stand on its own.

Everyone of my kids loved crust when growing up, and now the grandchildren also. I would
sometimes just bake the leftover cuttings on a separate baking sheet for them and they loved it.
Your quiche looks wonderful, so browned and well done. Tricia and I will certainly be using this
recipe again and again. Both our families loved the flavors.

Just like your son, I could eat this crust totally on it's own too. Luckily, I also adored the filling. Your quiche looks amazing! Nicely done!
